tex mex rice salad

Cold rice salads are perfect summer fare. They’re awesome for family picnics, backyard BBQs, and potluck dinners because they hold up so well and everyone loves them.
This Tex Mex Rice Salad is particularly good with fajitas, tacos, and enchiladas. It’s slightly spicy, crunchy, and bursting with fresh flavors like lime, cilantro, and bell pepper. Serve it alongside Walking Tacos for a kid’s birthday party or after a baseball game. You’re gonna want to be prepared to share this recipe.
4 cups cooked brown Basmati rice, chilled well
6 green onions, sliced thin (including the green tops)
1/2 teaspoon to 1 teaspoon sea salt (we love pink Himalayan)
1 teaspoon Southwest Chipotle Mrs. Dash seasoning blend
1/3 cup fresh lime juice or lemon juice
2 Tablespoons extra virgin olive oil
1 to 2 teaspoons agave syrup
2 cups julienne carrot
small handful fresh cilantro, chopped
1 cup sliced cherry tomatoes or grape tomatoes (or chopped tomato)
1 medium yellow bell pepper, coarse chopped
Mix all in a large, pretty salad bowl and top with more lime wedges for garnish.
