country club smoked almond chicken salad

Reminiscent of a chicken salad sandwich I enjoyed while visiting a country club for lunch a while back. Tangy, sweet, smoky, and crunchy! This chicken salad has it all! Amp up the smokiness by using smoked chicken, along with the smoked almonds, if you have access to it.

3 large boneless skinless chicken breasts, smoked or grilled, chilled

3/4 cup real mayonnaise

2 Tablespoons Dijon mustard

 2 Tablespoons honey

3/4 cup smoked almonds, chopped

2 celery stalks, finely chopped

1/4 cup finely chopped onion

1 Tablespoon fresh or dried tarragon (chop fine if using fresh)

salt and pepper, to taste

your favorite sandwich rolls or bread (we love the sweet Hawaiian rolls)

Chop up the fully cooked, chilled chicken and place it in a large mixing bowl along with the mayonnaise, mustard, honey, almonds, celery, onion, and tarragon. Mix well. Salt and pepper, to taste. Pile high on your favorite sandwich rolls or bread. Serve with your favorite chips, fresh fruit, and a tall glass of iced tea or lemonade!
