Ready to make these pretty tea sandwiches? Your guests will ooh and ahh over these. They’re delicious, easy to prepare and are so beautiful on a tiered sandwich tray. I love to make flower and radish sammys in the spring and summer when I have all of the fresh ingredients growing right outside my kitchen door.
To make them you’ll need…
white sandwich bread cut into circles with a biscuit cutter
mayonnaise mixed with lemon zest, greek yogurt, wasabi, and salt to taste
radishes washed and sliced thin
edible flowers such as rose petals, johnny jump-ups, nasturtiums and pansies
fresh mint leaves
coarse sea salt
Cut out as many bread circles as you wish, (reserving the crusts for homemade croutons or bread pudding.) Combine the mayo ingredients to your liking. Be careful with that wasabi, it’s spicy! Spread the mayonnaise mixture on the bread circles. Top with radish slices, flowers and mint leaves. Sprinkle on a little coarse sea salt and serve immediately with your favorite tea.
