chicken & waffle “tacos”

The chicken and waffle craving is a very specific craving that nothing else can really fix. They’re not health food, and if you try to make them healthy, they’re just not the same. You’ll just wander around feeling gypped with the original craving anyway. If you’re anything like me, you’ll find yourself eating ‘around’ the craving and probably end up consuming something else you probably shouldn’t and wish you would have just given in and let yourself have what you wanted in the first place. Does this sound at all familiar?

What I’m trying to say is I think you should just have some chicken and waffles. If that’s what you want. 🙂

I decided to make chicken and waffle “tacos” ‘cuz that’s how I roll. I made the maple syrup spicy by adding some sriracha hot sauce. These little nibbles are awesome and would be perfect for entertaining. Make up a batch of my super crunchy chicken (in little nuggets instead of whole chicken breasts) if you feel ambitious. Just follow the highlighted link HERE… or… make it super simple by heating up some ready made chicken tenders or nuggets which you can find in your grocer’s freezer section.

for 2 chicken & waffle “tacos” :

2 small homemade waffles OR freezer waffles, toasted until golden

4 chicken nuggets or chicken tenders, heated until hot and crispy

1 green onion + some of the green top, sliced on the diagonal

2 Tablespoons fresh cilantro, torn

6 slices fresh jalapeno pepper

1/4 cup butter-flavored maple syrup + 2 teaspoons sriracha hot sauce

Place toasted waffles on a plate. Heat chicken according to package directions. Place 2 chicken portions on each waffle. Top “tacos” with some of the onion, cilantro and jalapeno. Poke a bamboo skewer through both tacos for a pretty presentation (and to keep them closed.) Mix the syrup with the sriracha and drizzle over tacos.
