oatmeal scotchies {regular & gluten free options}

These are delicious, chewy and sweet. I had some butterscotch chips leftover from making Special K Bars, so we made up a batch. I forgot how wonderful these are! And easy to make gluten free too. Just make sure your oatmeal is GF, and use gluten free all purpose flour in place of the regular all purpose flour.

1 and 1/4 cups all purpose flour OR gluten free all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1 cup real unsalted butter, softened

1 and 1/2 cups brown sugar

2 large eggs

1 and 1/2 teaspoons pure vanilla extract

3 cups old fashioned, rolled oats (not quick cooking and not steel cut)

1 and 2/3 cups butterscotch chips (I use Nestle)

  1. Preheat oven to 375 degrees F.
  2. Combine flour, baking soda, salt and cinnamon in small bowl. Beat butter, brown sugar, eggs and pure vanilla extract in large mixing bowl. Gradually beat in flour mixture. Stir in oats and chips. Drop by rounded tablespoons onto ungreased baking sheets. (2 inches apart.)
  3. Bake for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; transfer to wire racks to cool completely.
