Jeff and I have this little lunch ritual where we share an avocado and make simple, open faced sandwiches. If there are avocados in the house, this is what we’re having. Sometimes we change it up and do a combination of Parmesan cheese and extra virgin olive oil in place of the mayonnaise/Vegenaise. Sometimes we add tomatoes, Sriracha and toasted sesame seeds. But usually we just make them like this…

serves 2

2 slices Ezekiel bread or your favorite bread, toasted

real mayonnaise or Vegeniaise (not Miracle Whip)

1 whole, perfectly ripe avocado, peeled and sliced

lemon or lime wedges for squeezing over

Ponzu sauce

freshly ground black pepper

Spread mayonnaise or Vegenaise on toast slices. Top each with equal amount of avocado slices. Squeeze lemon or lime juice over. Sprinkle a little Ponzu sauce on top and grind a little pepper over everything.
