If you like BLT sandwiches, you’re going to love love love this salad! We enjoyed this as a main course dinner salad a couple nights ago and it was so yummy!
for 1 salad:
1 cup shredded romaine lettuce hearts
1 cup chopped baby spinach
1 small, cooked, chilled, cubed chicken breast
1/2 perfectly ripe avocado, peeled, pitted and cubed
1 or 2 thin slices onion, separated into rings
a handful of grape or cherry tomatoes
4 slices bacon, fried until crispy and crumbled
3 or 4 Tablespoons Creamy Parmesan Caper Ranch Salad Dressing
a handful of homemade croutons (or your favorite)
Assemble ingredients in a large, single serving salad bowl as listed above.
Enjoy!
