star spangled berry salad
A “bonus” blog post for your 4th of July, Lovelies! This is colorful, refreshing, healthy and festive!
serves 4
4 cups spring greens or baby spinach
2 cups fresh blueberries
2 cups fresh strawberry slices
2 cups jicama stars
4 green onions, chopped
crumbled blue cheese, feta or goat cheese (optional)
salt and pepper to taste
1 recipe for lite polka dot poppyseed dressing
Mix all salad ingredients together in a large salad bowl. Toss with desired amount of poppyseed dressing.

I have to admit I needed to Google “Jicama”, but now I can’t wait to get to the store and try one. This salad is calling to me – beautiful to look at, and I’ll bet the combination of textures and flavors will make it a new favorite around here.
