~cheddar bacon meatloaf ~
An easy, yummy meatloaf with the bite of sharp cheddar cheese and the smokiness of bacon. These chilly, snowy days call for comfort food! We love this with a fresh crispy green salad, mashed potatoes and chocolate pudding for dessert.
1 lb extra lean ground beef
2 large eggs
1-2 Tablespoons milk
20 Ritz crackers, crumbled fine
1 and 1/2 cups extra sharp cheddar cheese
1/2 cup onion, chopped fine
1 garlic clove, minced
1 teaspoon Italian seasoning
1 teaspoon fresh ground black pepper
4 slices thick cut bacon
Place all ingredients in a large mixing bowl and combine thoroughly with clean hands. Form into a loaf and place in a small loaf pan or casserole dish. Place the bacon strips over the top of the loaf. Bake at 400 degrees for 45 minutes or until completely cooked through. Slice and serve.
