{better than applebee’s} fiesta ranch salad dressing

My daughter worked for Applebee’s for a few years and whenever we went in to visit her I would have this huge salad called the Fiesta Chicken Salad. It was basically a big taco salad with chicken on it in place of taco meat, and it was, in my opinion, the best thing on the menu.

Recently we made taco salads at home and I was craving the tangy, slightly spicy, Mexican-style, salad dressing that comes on the Fiesta Chicken Salad. I decided to recreate it in my kitchen and this is what I came up with. It’s soooooo good! Enjoy it anywhere you’d use ranch dressing. Great on tacos too!

In a medium mixing bowl, combine:

1/3 cup chunky salsa (your favorite)

1/4 cup real mayonnaise (no substitutes)

1/4 cup plain greek yogurt

1/4 cup Parmesan cheese

1 heaping teaspoon spicy Dijon mustard

2 teaspoons Frank’s hot sauce

2 teaspoons cumin

1 teaspoon oregano

1 teaspoon chili powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

a generous squeeze of fresh lime juice

buttermilk to thin to desired consistency

Mix all ingredients until smooth. Thin with buttermilk, if needed. Transfer to a canning jar with a tight fitting lid. Refrigerate until ready to use. Shake before each use, ingredients may separate a little bit.
