~ easy pumpkin cake ~

1 (15 oz.) can pure pumpkin puree

3 large eggs

1/3 cup brown sugar

1/2 cup light olive oil or vegetable oil

2 teaspoons pure vanilla extract

1 box yellow cake mix (I used French vanilla)

1 heaping Tablespoon pumpkin pie spice

Combine all and mix with an electric or tabletop mixer for 2 minutes on medium speed. Pour into a buttered 9×13 glass cake pan. Bake at 350 degrees F for about 40 minutes (or until a toothpick inserted into the center of the cake comes out clean…don’t over-bake.)

~Melissa’s Homemade Cream Cheese Frosting~

8 oz cream cheese

1 stick butter, softened

2 and 1/2 to 3 cups powdered sugar (or more depending on how thick you like it)

Combine all in with an electric mixer until smooth and fluffy. Frost completely cooled cake. Refrigerate the cake until ready to serve.
