We are soooo enjoying summer. I am in love with the herb garden and heirloom tomatoes we’ve planted this year. We’ve been grilling pretty much non-stop… We’re heading out to Dressen’s this weekend . It’s such a fun little bike ride out there on the Pioneer trail. A great place to enjoy a burger and a beer and hang out.
Here’s a great recipe for grilled pork chops that we make all the time… enjoy!
You’ll Need:
4 pork chops (bone-in or boneless) about 1 inch thick
1/2 cup bbq sauce (your favorite), divided
3 tablespoons extra virgin olive oil + 3 Tablespoons sugar
3 tablespoons balsamic vinegar
2 tablespoon minced fresh rosemary
Sea Salt and freshly ground pepper
Marinate: the pork chops in 1/4 cup of the bbq sauce mixed with the olive oil, sugar, vinegar, rosemary, salt and ground pepper for 2 to 24 hours.
Heat grill (we prefer charcoal.)
Set grill to 350˚F. Grill 7 minutes per side, or until internal temperature reaches 160˚F. Brush remaining BBQ sauce over chops prior to serving. This particular dish is AWESOME with Garlic Rosemary Flatbread or THIS potato salad and THIS Arugula Salad.
