This creamy, chocolaty, overnight chia-oat pudding is my latest obsession. It’s so delicious and healthy, yet it’s like having dessert for breakfast! Feel free to add your favorite berries and toppings the next day. I love the combination of chocolate, bananas, and blueberries.
for two servings:
1 small, ripe banana, mashed
2 Tablespoons unsweetened cocoa powder
3 Tablespoons pure maple syrup
2 Tablespoons water
1/2 cup rolled oats
3 Tablespoons chia seeds
1 and 1/2 cups unsweetened almond milk
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
pinch of salt
Place all ingredients in a mixing bowl and stir until completely combined and all ingredients are incorporated. Divide between two stemless wine glasses or wide mouth canning jars. Cover and place in your refrigerator overnight. The next morning, uncover and top with berries, shredded coconut, sliced bananas, and whatever else sounds good to you.
