eggnog bread

This yummy quick bread is perfect for Christmas! I like to make mini loaves and add them to my Christmas gift baskets. It tastes just like the holiday beverage you know an love!

~ preheat oven to 350 degrees F. ~

2 large eggs

1 cup sugar

1 cup dairy eggnog

1/2 cup melted, unsalted butter

2 teaspoons rum extract

1 teaspoon pure vanilla extract

2 and 1/4 cup all purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon nutmeg, divided

Grease a 9×5 loaf pan. Beat eggs in a big mixing bowl. Add: sugar, eggnog, butter, rum extract, and vanilla extract. Blend well. Add flour, baking powder, salt, and half of the nutmeg. Stir just until dry ingredients are evenly moistened. Pour into prepared loaf pan. Sprinkle with the rest of the nutmeg.

Bake in preheated oven for 45 to 50 minutes, or just until a toothpick inserted into the center of the loaf comes out with a few moist crumbs on it. Cool for 15 minutes in pan. Transfer to a wire rack to cool completely before slicing and serving. Makes 12 slices. Garnish with a dollop of whipped cream and Christmas cookie sprinkles, if you wish.

Wrap tightly and store in refrigerator for up to 7 days.
