This gravy is fast, easy, and oh-so-good!

1 stick (1/2 cup) unsalted butter

1/2 cup all purpose flour

hot drippings from one, large completely cooked turkey

1 teaspoon onion powder

1/2 teaspoon garlic powder

salt and pepper, to taste

chicken or turkey stock, if needed

Strain turkey drippings through a sieve. Discard chunks. Set aside.

Heat butter in a large, heavy skillet over medium-low heat. Once melted, watch closely, whisking frequently, until butter turns a deep golden amber color. Be careful not to burn. Whisk in flour, onion powder, and garlic powder until smooth (approximately 1 minute.) Whisk in all of the prepared turkey drippings, stirring until thickened and smooth. Season to taste with salt and pepper. Thin with a little stock, if needed. Remove from heat and serve.
