sweet pepper confetti slaw

I whip up a big batch of this sweet slaw whenever I make pulled pork or BBQ beef sandwiches. It’s the absolute perfect accompaniment to tangy, sweet barbecue sauce. I’ve also served it as a pretty side salad at picnics and potlucks. It’s so gorgeous and delicious. You can’t go wrong with this salad. Everyone seems to love it’s simple flavors and pretty colors. (Even the kiddos!)

16 oz. finely shredded cabbage (a mixture of green and purple is nice)

1 small shredded carrot

1 small sweet red bell pepper, thinly sliced and chopped

1 small sweet orange bell pepper, thinly sliced and chopped

1 small sweet yellow bell pepper, thinly sliced and chopped

1 small sweet green bell pepper, thinly sliced and chopped

6 green onions, thinly sliced (including green tops)

6 Tablespoons white or apple cider vinegar

1/2 cup olive oil

1/2 cup sugar

salt and pepper, to taste

Place cabbage, carrot, all bell peppers, and green onion in a big salad bowl. Mix well. In a small bowl, combine the vinegar, oil, sugar, salt, and pepper. Whisk to combine until sugar is dissolved and the vinegar and oil are emulsified. Pour over salad in big bowl and toss to evenly coat. Cover and refrigerate until ready to serve.
