I’m dreaming up all sorts of new recipes to celebrate Cinco de Mayo, and I’m getting a head start on posting them so you can have a lot of yummy selections to choose from.

As you know, tacos are a staple in our house and we always have the basic ingredients for them on hand. The last time I was at the grocery store I spotted a bag of tostada shells and decided it was time to change it up a little bit. We adore the classic 7 Layer Taco Dip. Why not combine the two so everyone can have their own portion of the dip on a tostada shell? Oh my, this turned out amazing. Your guests will have fun building their own tostadas with their favorite ingredients.

for 4 tostadas:

4 tostada shells, warmed

4 oz. softened cream cheese

1/3 cup Greek yogurt

1/2 to 1 cup refried beans, warmed

1/2 to 1 cup guacamole (homemade or store bought)

1/2 cup salsa (homemade or store bought)

1/2 cup shredded cheddar jack cheese

1/2 cup shredded lettuce

1/4 cup chopped cilantro

1/4 cup chopped tomato

chili powder

 hot sauce

Heat each tostada shell in microwave for one minute. Place on separate plates.

Mix cream cheese and yogurt together until smooth. Divide evenly between the tostada shells, using a knife to spread a thin layer. Leave a little bit of this mixture to garnish the top of each tostada.

Next, spread a layer of warmed refried beans over the cream cheese mixture, followed by the guacamole, salsa, shredded cheese, and veggies. Place a dollop of the reserved cream cheese mixture on each, followed by a sprinkle of chili powder and a drizzle of hot sauce.

You may end up with extra toppings, this recipe includes generous portions of each topping so you can really load them up if you want to.
