We love Thousand Island dressing! This year when I made the dressing to go with our annual St. Patrick’s Day Reuben sandwiches, I decided to use this spicy relish instead of the usual sweet pepper relish. It’s made by a company called Original Juan, and it’s awesome. It’s creamy, spicy and the perfect accompaniment to sandwiches and salads.

Thousand Island salad dressing with a kick!

2/3 cup real mayonnaise

1/3 cup ketchup

2 Tablespoons finely chopped green pepper

1/4 cup Pain is Good Sweet & Spicy Three Pepper Relish

6 green, pimento-stuffed olives, chopped

1/4 cup finely chopped onion

Place all ingredients in a mixing bowl and whisk until smooth. Transfer to a canning jar with a tight fitting lid and refrigerate until ready to use. Shake well before each use. This dressing will keep, in your ‘fridge, for a week.
