The delicious, juicy strawberry meets the savory grilled chicken breast. I love savory berry dishes, and just as my recipes for grilled blueberry pizza with goat cheese and lemon thyme and chicken with red grapes and pan sauce surprised and delighted your taste buds, this is sure to please. Ready? 🙂

~ serves 6 ~

3 heaping cups fresh strawberries, quartered

1 Tablespoon white balsamic vinegar

1 Tablespoon red or rose wine

1/4 cup organic strawberry preserves or jam

1 Tablespoon olive oil

1 teaspoon cornstarch

6 medium boneless skinless chicken breasts (3 lb. total)

freshly ground black pepper

fresh basil sprigs (optional)

Preheat oven to 400 degrees F. In a 3 quart baking dish, combine: strawberries, vinegar, wine, jam and olive oil. Sprinkle a little salt and pepper over the top and place in oven, uncovered. Bake for 15 to 20 minutes or until berries are tender and everything is bubbling and hot. Remove from oven and immediately stir in cornstarch. Stir gently, just until starch is fully incorporated and melted berry mixture has thickened. Cover and set aside.

Grill chicken on a charcoal grill until meat is done and juices run clear. Plate and top with the melted strawberries. Garnish with freshly ground black pepper and fresh basil sprigs, if desired.
