~ chicken & roasted red pepper hummus wrap ~
We whipped these together for a quick lunch this past weekend and I thought they turned out really good. Easy and healthy. If you’re a vegetarian you could substitute a chopped Boca Chik’n burger for the chicken breast.
whole grain tortillas or sandwich wraps
roasted red pepper hummus or toasted sesame hummus
a drizzle of extra virgin olive oil
salt and pepper to taste
finely chopped onion
chopped, cooked chicken
shredded Monterey Jack or sharp cheddar cheese
lettuce or spinach
Sriracha hot sauce
Spread the hummus on the sandwich wraps and proceed with the following ingredients in the order listed. Wrap the sandwich up tight, slice on the diagonal, and pierce each half with a skewer to keep them wrapped until they’re eaten. Serve with your favorite chips, fruit or crudite.
