One of my friends gave me some yummy, gourmet “birthday cake” flavored popcorn for Christmas and it was SO incredible I was determined to create a copycat version.

This tastes like funfetti birthday cake! It’s buttery, and the white chocolate, flavorings, and sprinkles make it taste like frosting.

This popcorn is fast and easy to prepare. You could make up a big batch and divide it into cute bags for party gifts, or as a fun addition to movie night!

1 bag popped, butter-flavored microwave popcorn

1 (9 oz.) bag white chocolate chips OR vanilla chips

1/4 teaspoon almond extract (optional)

1/4 teaspoon pure vanilla extract

Pop popcorn according to package directions. Transfer to a large mixing bowl to cool. Melt chocolate chips in microwave-safe bowl. Once melted, add the almond and vanilla extracts. Mix well. Pour over popcorn. Gently mix with clean hands or a wooden spoon to evenly coat the popcorn. Transfer to wax paper-lined countertop. Spread out so the coated popcorn can cool evenly. Sprinkle with the rainbow sprinkles.

Once popcorn is completely cool, break into smaller pieces and enjoy immediately, or transfer to Ziploc bags or a container with a tight fitting lid. Popcorn will keep at room temperature for 3 days.
