peach mango salsa

A beautiful, fresh salsa with bright flavors that’s wonderful with grilled fish or chicken. It’s also amazing on fish tacos or served as a little side salad. Be sure to use perfectly ripe fruit for this.

4 large, perfectly ripe peaches, unpeeled, pitted, cut into chunks

1 perfectly ripe mango, peeled, pitted, cut into chunks

1/4 cup coarsely chopped, fresh cilantro or basil

juice of one large lime

2 jalapeno peppers, stem removed, chopped fine

2 green onions + green tops, sliced

1 Tablespoon white wine vinegar

salt and pepper, to taste

Place all ingredients in a medium serving bowl. Mix gently to combine. Chill for an hour before serving.
