Okay, Lovelies. You’ve expressed that you’d like to see more EASY, yet elegant, desserts you can serve this Christmas season. I’ve recently posted a couple fudge recipes with 2 or 3 ingredients, but fudge, while delicious, isn’t exactly elegant. So here’s another one of my favorite easy desserts that is also elegant. 3 ingredients, and only minutes to prepare! Serve this in martini glasses or vintage champagne glasses, and offer your guests their choice of sundae syrups. Chocolate, caramel, raspberry, creme de menthe, blueberry, pineapple… the possibilities are endless. (I put the syrups in teacups and include little silver spoons for drizzling. So pretty!)

Scoop out ice cream into pretty, round scoops. Don’t worry, they don’t have to be perfect. Roll them in coconut so they’re completely coated. Place in martini glasses. Serve, and let guests drizzle on their own syrups.
