A delicious chicken recipe to make when you’re short on time. It’s so delicious and easy to prepare. Serve it with a simple salad and a baked potato or some brown rice. If you’re looking for fancy and complicated, this isn’t that.
~ preheat oven to 350 degrees F. ~
3 to 4 lb. chicken leg quarters (bone in, skin on)
2 teaspoons Chinese 5 spice powder
2 teaspoons onion powder
1 teaspoon smoked paprika
1 teaspoon roasted garlic powder OR regular garlic powder
1 teaspoon ground ginger
1 teaspoon fennel seeds
1/2 teaspoon white pepper
Place fresh chicken pieces (or completely thawed chicken pieces) on a large, parchment-lined baking sheet. Combine all the spices and sprinkle them evenly over the chicken. Place in preheated oven and bake until cooked all the way through and a meat thermometer reads 165 degrees when inserted into chicken, (approximately 50 to 60 minutes.)
Once chicken is done, remove it from the oven. Sprinkle the following ingredients over the top just prior to serving:
2 Tablespoons dark sesame oil
1/4 cup chopped, fresh parsley
coarsely chopped sweet orange or red bell pepper
salt and pepper, to taste
