I adore Island Restaurant‘s burgers, salads and dinner bowls. The Beach Bowl is one of my favorite treats to make at home! It’s so easy, healthy, and delicious. And those colors! Such a pretty dish. We recently made these yummy bowls when our friend Dana came to visit.

You want to start with a pot of fully cooked brown rice and some yummy grilled chicken. I marinated our chicken in balsamic vinegar, coconut sugar, pink sea salt, olive oil, sesame oil, freshly ground black pepper, and a dash of cayenne pepper. I just put the marinade, along with the chicken, in a big Ziploc bag and allowed it to marinate in the fridge for about 5 hours prior to grilling the chicken over charcoal.

This is also wonderful with grilled Mahi Mahi fish!

stack in single serving bowls in the following order:

for one beach bowl

1 cup cooked brown rice

fresh pineapple cut into bite size chinks

steamed pea pods, cooked just until tender and bright green

steamed broccoli florets, cooked until just tender and bright green

fresh red bell pepper, chopped

sliced water chestnuts

chopped red onion

sliced scallions

6 to 8 oz. grilled chicken OR Mahi Mahi fish

a drizzle of hoisin sauce OR teriyaki sauce

hot sauce (optional)
