Here’s another one of the delicious, somewhat outrageous, appetizers I made for Super Bowl Sunday! I got the idea from the lineup of new offerings at the Minnesota State Fair this past August and just knew I had to recreate these at home. They’re the perfect indulgence for a special gathering or served as a casual weekend snack. Make a bunch! They go fast…

serves 6

32 oz. frozen, seasoned, Tater Tots

1 lb. lean ground beef OR fully cooked pulled pork (regular or BBQ)

taco seasoning

8 oz. sharp cheddar cheese, shredded

salsa (store bought or homemade) OR chopped tomato, onion, bell pepper and cilantro

1 or 2 chopped, ripe avocados OR 1 cup guacamole

sour cream

light sprinkling of cayenne pepper and hot sauce

Line a big baking sheet with cooking parchment or foil. Place Tater Tots on baking sheet in one layer and bake according to package directions (I cooked ours at 425 degrees F. for 35 minutes.)

While Tater Tots are baking, cook the ground beef in a skillet and add taco seasonings to your liking. (I used cumin, chili powder, smoked paprika, garlic and onion powder.) Cook beef completely, until no longer pink. Or, heat up leftover, fully cooked pulled pork if that’s what you have on hand or prefer to use.

Once Tater Tots are done (golden brown, crispy, and hot all the way through) Top them with the prepared meat and shredded cheddar cheese. Place back in oven for 5 minutes, or just until cheese has melted. Remove from oven and top with salsa/veggies, avocado, sour cream, cayenne and hot sauce. Divide into 6 portions and serve.
