Such lovely weather we’ve been having in the Mississippi River Valley these past few days. Close to 40 degrees (which I realize is cold to some of you who live in more tropical/desert climates) but it’s like Spring to a Midwesterner. I walked up to a few of my favorite antiquing/thrifting haunts yesterday and didn’t have to bundle up like a snowman. No mittens! No scarf! No earmuffs! Such freedom! LOL…
So today I’m sharing a smoothie recipe that I invented awhile back when I was writing Chin Deep in Bubbles. It’s soooo refreshing, it will make you feel like it’s summer, no matter where you are or what the weather may be doing outside your door.
Makes 2 smoothies :
7 or 8 large strawberries, halved
1 clementine, peeled and sectioned
1/2 of a large, ripe banana
1/2 cup Very Berry Yo-J (or sweetened yogurt+juice to equal 1/2 cup)
1/2 cup crushed pineapple in juice
2 handfuls ice
Zip all in blender until smooth. Pour into wine glasses, teacups or other drinking glasses…and enjoy immediately.
