Here’s a delicious, easy comfort food dish that is fancy enough for company, makes a great side dish, and is totally craveable. I love to pick up the ready-made tortellini in the refrigerated section of our grocery store. It only takes minutes to prepare and it’s a great “canvas” for anything you might want to add to it. We like sweet peas, and bacon….but mushrooms and asparagus are also great with this. What will you add to yours?

20 oz. fresh or refrigerated tortellini (your favorite flavor…I like the three cheese)

1/2 lb. bacon fried until crispy, drained well and crumbled

2 cups fresh or frozen peas (thawed/heated)

3 large cloves garlic, minced

1 cup freshly grated Parmesan cheese

1/2 cup extra virgin olive oil

sea salt (to taste)

freshly ground black pepper (to taste)

Cook tortellini according to package directions. Drain and pour into a large pasta/mixing bowl. Add the fried bacon, peas, minced garlic, Parmesan cheese, salt and pepper. Divide among single serving pasta bowls and enjoy with your favorite salad.
