Can you think of anything more summery than fresh tomato salad? We make caprese and bruschetta almost constantly…and when we run out of crusty bread and fresh mozzarella, we make this…
10 ripe Roma or heirloom tomatoes
2 large garlic cloves, minced
1 teaspoon onion powder
fresh basil, thyme and chives
1/3 cup extra virgin olive oil (we like unfiltered)
a splash of dry red or white wine
a splash of balsamic vinegar
coarse sea salt and freshly ground black pepper to taste
Combine everything in a medium size mixing bowl.
Great as a light lunch or as an accompaniment to a leisurely dinner al fresco.
