Delicious baked oatmeal sweetened with applesauce and brown sugar. This breakfast treat can be served with apples and sausage (see recipe below) or a healthier ‘every day’ version that I like is to serve it with is vanilla yogurt, berries and banana slices. This recipe can be doubled and cooked in a 9×13 cake pan. Just cover leftovers, refrigerate, and reheat oatmeal squares in the microwave.
~Baked Oatmeal~
Serves 4
Preheat oven to 325 degrees F
2 cups rolled oats (not quick cooking)
1 and 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup 2% milk
2 eggs, beaten
1/2 cup chunky applesauce
1/2 cup dark brown sugar
In a large bowl, combine oatmeal, baking powder, and salt. Mix in milk, eggs, applesauce, and brown sugar. Combine well and pour into a medium sized casserole dish or a square, glass cake pan. Bake at 325 for 45 minutes. Cut into squares. Serve hot with desired toppings.
~Apples & Sausage~
1 lb. Polish sausage (regular or light)
6 medium cooking apples, washed, cored and each cut into 8 wedges
3 Tablespoons brown sugar
1 Tablespoon lemon juice
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon pepper
Cut sausage into bite size pieces. Cook in a skillet for 10 minutes over medium-high heat, uncovered. Add apples, sprinkle with sugar, lemon juice and spices. Cover and simmer for 10-15 minutes, stirring occasionally. Serve with baked oatmeal, pancakes, waffles, or French toast.
