Yet another tempting salad to entice you 😉

makes 4 large dinner salads:

8 cups spring greens, arugula or baby spinach

8 oz. crumbled feta cheese or chevre

2 cups hulled, sliced fresh strawberries

2 cups fresh blueberries or black berries

4 thick slices purple onion, chopped

4 large grilled chicken breasts, cut into strips and served warm or chilled

mint leaves/sprigs for garnish (optional)

creamy balsamic dressing (recipe below)

for the creamy balsamic dressing:

1 cup peanut oil

1/4 cup apple cider vinegar

2 Tablespoons balsamic vinegar

1 Tablespoon honey

1 Tablespoon Dijon mustard

1/4 cup brown sugar

2 Tablespoons Ponzu sauce or lite soy sauce

1 teaspoon freshly ground black pepper

Place all dressing ingredients in the bowl of a blender and blend until smooth and creamy.

Divide salad greens, feta/chevre, berries, onion, and chicken breast strips evenly among 4 salad bowls. Drizzle a little of the dressing over each salad and garnish each with a sprig of mint. Serve.

Enjoy!

One of my favorites. I really like chicken salad with fruit. Panera Bread has a Strawberry Chicken Salad with strawberries, blueberries, Mandarin Oranges and Pineapply chunks. Served with a Poppyseed dressing.

This sounds so nice and fruity. Just the thing for a spring salad.

I can’t get to Panera unless I’m travelling to an out of town doctor’s appointment.

    Thanks.
