ham & cream cheese pickle roll-ups
Yes, I still have more appetizer recipes to share with you thanks to the ridiculous amount of them that I made for Super Bowl Sunday. Ohmygoodness. They were all sooooo good too. This is one of my favorites and it hails from my childhood. My grandma and great aunts made these around the holidays, and there were never any left over, which is always the sign of a good recipe. This one is a keeper!
The amount of roll ups you get depends on how thin you spread the cream cheese. I like a thick layer, so I always end up with fewer appetizers.
48 to 64 bite size appetizers:
12 to 16 slices of deli ham (cut a medium thickness)
8 oz. cream cheese, softened to room temperature
12 to 16 smallish pickles (I use Milwaukee’s kosher baby dills)
Lay ham slices out on a large cutting board. Evenly spread approximately 1 Tablespoon of cream cheese on each ham slice so it reaches the edges. Place a pickle at one end of the cream cheese ham slice and roll it up. Repeat with the rest of the ham slices and pickles. Once you have 12 to 16 rolls, place them on a platter and refrigerate for 2 hours. Once the two hours is up, remove the rolls from the refrigerator. Using a very sharp knife, cut each roll into 4 pieces. Place roll ups in a airtight container in your refrigerator until ready to serve.
For a pretty presentation: Arrange roll-ups on a serving platter with a toothpick in each.

Had these at a friends house. Simply ate until I was stuffed. They are WONDERFUL. She told us the recipe. We tried to make them but they were a simple flop. Now I know why. She didn’t really give us a recipe. She just said, ham, pickles, creme cheese. Thanks to your recipe we will actually get it right. I will be making these for ballgames etc during March Madness. I will also make them at any time because they are so good.

My mother use to make these all the time for parties. She has been gone now 30 years. I still make now and then to take places. I also make her bacon roll ups for parties every year too.

what are bacon roll ups? are they made the same and you use bacon instead of ham?
Cut bacon in half take a piece of white bread remove crust and cut into quarters. Place 1/4 of bread on 1/2 of bacon sprinkle with Parmesan cheese. Roll up secure with toothpicks sprinkle with more Parmesan cheese. Bake 375 for 15 minutes on a wire rack so grease drains , turn over sprinkle more cheese and bake an additional 15 minutes or until as crispy as you like. Delicious,!!! people think it’s scallops inside until they try it. Lol
I have made these with dried beef instead of ham. We called them Frog Eyes!

I use Buddig pastrami. We call it Iowa sushi. Use the whipped cream cheese.
