When we were vacationing in Manhattan Beach California (and surrounding areas) this past spring, we ate one of our favorite restaurants every day. It’s become a tradition every time we go to Cali! It’s a totally amazing place, and it’s called The Ocean View Cafe. They serve some of the best breakfast food I’ve ever eaten, and now when I make these avocado-laden breakfast tacos, I think of our dear friend Adolfo, his amazing coffee and food… and that beautiful place with a patio overlooking the crystal blue ocean.

serves 1 person (3 breakfast tacos)

3 corn tortillas, browned on a gas burner (set on very low)

2 large eggs, scrambled

2 thick cut strips of bacon, fried until crispy and crumbled

1/2 perfectly ripe avocado, cut into chunks

1/3 cup canned black beans, rinsed and drained very well

3 oz. sharp cheddar cheese, grated

1 small handful cilantro, chopped

2 to 3 Tablespoons chopped purple or green onion

1 Roma tomato, chopped

3 Tablespoons sour cream OR plain greek yogurt

lime wedges and your favorite hot sauce for topping

Pile all of the ingredients into prepared tortillas.
