In a rush to get dinner on the table? This takes about 40 minutes from start to finish and it’s wonderful. I served this chicken dish with a simple tossed salad, baked sweet potatoes and Cheesy BBQ Garlic Bread. YUM!

~ preheat oven to 400 degrees F. ~

4 boneless, skinless chicken breasts (fresh or completely thawed)

sea salt and freshly ground pepper

3 Tablespoons olive oil (I used extra virgin) OR butter

6 large cloves fresh garlic, minced

1/3 cup brown sugar

1 Tablespoon honey

2 teaspoons dry Italian seasoning

2 Tablespoons fresh parsley, chopped

Pat chicken dry and season it with the salt and pepper. Put 2 of the Tablespoons of oil in a cast iron skillet over medium-high heat. Once hot, add chicken. Sear both sides (approximately 2 to 3 minutes per side.) Remove seared chicken from skillet and set it aside. Melt remaining Tablespoon oil in skillet. Add garlic. Cook for 1 minute, or just until fragrant. Remove skillet from heat. Stir brown sugar, honey and Italian seasoning into the garlic butter mixture. Add chicken back to skillet and scoop some of the brown sugar mixture over each breast. Cover skillet tightly with aluminum foil or a cast iron lid. Place in preheated oven and cook for 25 to 30 minutes or just until chicken is done. Garnish each piece of chicken with some of the fresh parsley.
