Elaine: They have big salads.

George: No, no, Hey I’ll get it. What’s in the BIG salad?

As much as I love to cook, sometimes it’s nice when the hubby offers to pick up dinner on the way home. Jeff does this about once a week…our favorites, Byerly’s sushi, picnic fare, and rotisserie chicken. He brought chicken last Friday and we had plenty left over the next day. Rotisserie chicken is great made into a soup, or piled on a salad.
Yummy Lunch Salad (serves 2)
Fresh arugula piled into salad bowls
2 Roma tomatoes, chopped
about half of a cold rotisserie chicken, taken off the bone
real bacon bits
a little bit of finely chopped onion
freshly grated Parmesan cheese
baby carrots
croutons (optional)
your favorite salad dressing.
Divide the ingredients between two bowls. Voila, lunch is served!
