I’ve been saving these little recipes for quite some time so I could eventually share them with you. Every day I kind of flip past them when I’m paging through the eight bazillion ideas I have on my “master blog idea list.” I decided that today I’m going to just dedicate a blog to them so I can finally cross them off the list, and so you can enjoy them… 😉

3 Ingredient Peanut Butter Cookies (aka-Best Peanut Butter Cookies on Earth)

2 cups natural, organic peanut butter

2 cups granulated sugar

2 eggs

Mix all ingredients in a large bowl until thoroughly combined. Drop by generous tablespoonfuls onto ungreased cookie sheets (about 2 inches apart.) Flatten with a fork in the traditional crisscross peanut butter cookie pattern. Bake 8-10 minutes in a 350 oven. Allow to cool on cookie sheets for a few minutes before transferring to cookie cooling racks.

Easy Candy Apple Yams

1 can (about 30 oz) yams, drained

1 tart apple, cored and chopped into 1 inch chunks

2 Tablespoons butter, melted

1 Tablespoon brown sugar

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

10 large marshmallows

In a casserole dish make an even layer of yams and apples. Drizzle melted butter over. Sprinkle the brown sugar and spices over. Top with marshmallows, spaced somewhat evenly. Bake in a 350 oven for about 30 minutes, until the marshmallows are lightly browned and the yams are heated through. These go great with grilled pork chops or chicken.

“Just Like Big Mac” Special Sauce

1/2 cup real mayonnaise

2 Tablespoons French dressing

4 teaspoons sweet pickle relish

1 Tablespoon finely chopped onion

1 teaspoon vinegar

1 teaspoon sugar

1/8 teaspoon salt

Wonderful on grilled hamburgers!
