This is such a fun, delicious dinner to make when you’re getting tired of the same old thing week after week. I’ve made this with sausage, ham and bacon and served it as a main dish for a brunch gathering, but most of the time I make it like this…

~ preheat oven to 400 degrees F ~

serves 6 to 8 people

 1 lb. lean ground beef, bison or turkey

1/2 cup chopped green onion

1 (8 oz.) package cream cheese, cubed (don’t use low fat for this)

1/4 cup water

1 teaspoon dry Italian seasoning

1 teaspoon Mrs. Dash Garlic & Herb Seasoning

1/4 teaspoon curry powder

1 Tablespoon butter (for buttering pan)

1 Tablespoon cornmeal

2 jumbo eggs, beaten

3/4 cup flour

1/2 teaspoon salt

3/4 cup 2% or whole milk

1 teaspoon regular or smoked paprika

1/2 teaspoon freshly ground black pepper

1/4 teaspoon garlic powder

1 medium Roma tomato, seeded and chopped

3 Tablespoons fresh parsley, chopped

Sriracha and salt for seasoning

Brown meat and drain. Add onion and cook until tender. Add cream cheese and water. Stir over medium heat until cream cheese is melted. Stir in Italian seasoning, Mrs. Dash and curry powder.

Butter a 10 inch (deep dish) pie plate and sprinkle 1 Tablespoon of cornmeal all over the bottom and sides. Mix eggs, flour, salt and milk. Beat until smooth. Pour into pie plate. Carefully spoon the meat mixture evenly over the center of the batter. Sprinkle paprika, black pepper and garlic powder evenly over everything.  Bake for 35 to 40 minutes or until the popover is puffed and golden and the meat is very hot in the center. Cool for 10 minutes before slicing. Top with the chopped tomato and parsley. Slice and season with Sriracha hot sauce and salt, to taste.
