Here’s another little salad dressing I dreamed up. Tapenade is one of my favorite appetizers, so I invented a recipe for a salad dressing using these flavors and ingredients. Jeff loves this on roasted baby bliss potatoes too!
10 kalamata olives, pitted
1/4 cup of the brine from the kalamata olive jar
1/2 cup extra virgin olive oil (I use unfiltered)
1 medium, ripe tomato – coarse chopped
1/2 of a small onion – coarse chopped
2 teaspoons dried Italian seasoning (or pizza seasoning)
1 large garlic clove
3 Tablespoons greek yogurt or sour cream
2 teaspoons lemon zest
2 teaspoons coarsely ground black pepper
1 to 2 teaspoons sea salt
Zip all in a blender or food processor until smooth.

Oh this sounds marvelously delicious! I absolutely love tapenade too, and your dressing is a stroke of brilliance. It’s got me thinking: What about a puttanesca-inspired dressing? Somewhat similar with olives, tomatoes & Italian seasonings, but also some capers, anchovy & hot red pepper flakes… Do you like puttanesca sauce, and if so, have you tried making a dressing with those flavors?
Hi Gloria! Thanks so much for the compliment, and for the idea 🙂 I DO like puttanesca…but I’m a little funny about anchovies. I really like them, but not whipped up in salad dressing. My green goddess dressing is sans anchovies for this reason. I have made a salad dressing with pesto as the base…recipe coming soon. xoxo
