~ green goddess dressing ~

Green Goddess is one of my favorite salad dressings…full of fresh herbs, chives, garlic and creamy buttermilk…and, well, anchovies, if that’s your cup of tea. I personally only enjoy anchovies when they’re melted in olive oil and tons of garlic for THIS recipe. I don’t like them raw, I don’t like them strewn about on pizza, just waiting there under the cheese to give you a fishy surprise, and I don’t like them blended (ew!) in my salad dressing. If you do, then add 2 of those little fillets to this dressing. Knock yourself out 🙂

In a food processor, puree:

makes 2 cups

1 cup real mayonnaise

2/3 cup buttermilk

1/2 cup chopped fresh chives

1/2 cup flat-leaf Italian parsley

1/4 cup fresh basil leaves

2 Tablespoons fresh Tarragon

3 Tablepsoons fresh lemon juice

2 large garlic cloves

sea salt and freshly ground black pepper

Cover and chill and use within a week on salad, steamed fish, grilled shrimp, or as a dip for crudite or Japanese Onigiri. (recipe for Onigiri coming soon!)
