four ingredient chocolate chip peanut butter cookies

Unbelievably easy to make… These rich, chocolaty, peanut buttery cookies are more like peanut butter shortbread. The best peanut butter cookies don’t call for flour. I am so happy I made this discovery. Only four ingredients! Need I say more? 😉

2 cups organic, creamy peanut butter

2 large eggs

2 cups sugar

1 and 1/4 cup semi sweet chocolate chips

In a large mixing bowl, combine all ingredients until thoroughly incorporated. Form into golf ball size balls. Place on ungreased cookie sheets and flatten with a fork using the traditional criss cross pattern. Bake at 350, one batch at a time, for about 12 minutes. Remove from oven and allow to cool a bit before transferring to cooling racks. The cookies will seem a little soft right out of the oven, but will firm up as they cool. Fantastic with a rich cup of French press, tea or milk.
