two ingredient crock pot barbecue chicken

I like making things as easy as possible during the summer months. I make a big Crock Pot full of my salsa chicken (for tacos) or this easy bbq chicken (for sandwiches) every week so we have simple, delicious, accessible lunches at the ready.

4 to 6 large boneless skinless chicken breasts

1 bottle (19 oz.) of your favorite BBQ sauce (I used Heinz Kentucky Bourbon)

Place chicken breasts in your Crock Pot slow cooker. Pour half the bottle of the sauce over the top of the chicken. Roll chicken around in sauce to coat. Cover slow cooker and turn to HIGH setting. Cook for 3 to 4 hours or just until chicken is cooked all the way through and shreds with a fork. Don’t overcook or your chicken will become dry and rubbery.

Once done, remove chicken from sauce and shred with two forks. Place chicken back in slow cooker and add the rest of the barbecue sauce. Stir to combine. Cover and place on warm setting. Use as a filling for sandwiches.
