You aren’t going to believe how easy and delicious these peanut butter cookies are! And only three ingredients! They’re perfect, and with no flour added, they’re grain free!
~ preheat oven to 350 degrees F. ~
2 cups creamy peanut butter
2 large eggs, lightly beaten
2 cups sugar
In a large mixing bowl, combine all ingredients until thoroughly incorporated. Form into golf ball size balls. The dough will be fairly soft. Place on ungreased cookie sheets, 2 inches apart, and flatten with a fork using the traditional criss cross pattern. Bake at 350, one batch at a time, for about 12 minutes. Remove from oven and allow to cool a bit before transferring to wire racks. The cookies will seem a little soft right out of the oven, but will firm up a bit as they cool. Once completely cooled, store in an airtight container at room temperature for up to one week.
