Easy, delicious, and different than the usual baked chicken breasts. We love these served with a simple tossed salad and oven roasted squash or sweet potatoes. Serve something apple for dessert. YUM!

~ preheat oven to 350 degrees F. ~

16 club crackers OR saltines, crushed into fine crumbs (3/4 cup)

8 oz. extra sharp cheddar cheese, grated

2 large cloves garlic, minced

1/2 teaspoon freshly ground black pepper

6 (6 oz.) boneless skinless chicken breasts

4 to 5 Tablespoons melted butter

parsley for garnish

In a large bowl, combine crackers, cheese, garlic, and pepper.

Place the melted butter in a smaller, shallow bowl.

Dip the chicken pieces in the butter, and then the cracker/cheese mixture. Pressing it to help it stick to the chicken. Place coated chicken pieces on a large parchment or foil-lined baking sheet. Sprinkle the rest of the cracker mixture over the chicken pieces, and drizzle with the rest of the butter.

Bake, uncovered, until chicken is golden brown and cooked all the way through (approximately 25 to 30 minutes.) Garnish with parsley, and serve.
