Here’s an easy, comfort food meal that goes together quickly and simmers away in your slow cooker all day. Serve with a simple salad and buttery baguette.

2 lb. lean ground beef

4 medium potatoes, sliced into matchsticks

1 large onion, diced

1 stalk celery, chopped

1 green pepper (or other color), chopped (seeds and stem removed)

1 (15 oz.) can black beans, drained and rinsed well (kidney beans or white beans will work)

1 (24 oz) jar spaghetti sauce OR marinara sauce

1 (10 oz.) can petite diced tomatoes, undrained

1/2 cup dry red wine

2 Tablespoons quick cooking tapioca

2 Tablespoons Worcestershire sauce

2 garlic cloves, minced

3 large carrots, peeled and sliced into “coins”

2 Tablespoons butter, cut into little chunks

grated sharp cheddar cheese (for topping)

salt and pepper, to taste

Brown the ground beef and drain well. Place in slow cooker along with potatoes, onion, celery, green pepper, beans, spaghetti sauce, tomatoes, wine, tapioca, Worcestershire sauce,  and garlic. Mix well. Place sliced carrots on top, followed by the little chunks of butter. Cover and cook on LOW setting for 6 hours or until veggies are tender. Plate and serve with cheese grated over the top. Salt and pepper to taste.
