Are you looking for some awesome appetizers to serve at your next gathering? Here’s one of my favorites. It’s a new twist on the classic artichoke dip, and I think it’s safe to say that my additions improved an already delicious recipe.

~ preheat oven to 350 degrees F. ~

1 to 2 (14 oz.) can(s) artichoke hearts, drained very well and chopped

1 cup mayonnaise

1 cup shredded sharp cheddar cheese

1 cup Parmesan cheese

1 large garlic clove, minced

3 green onions chopped (including green tops)

1 teaspoon smoked paprika

10 crushed Ritz crackers (for topping)

More Ritz crackers, or baguette slices (for serving)

Place drained, chopped artichoke hearts, mayonnaise, cheeses, garlic, onions, and paprika in a mixing bowl and mix well. Spread into a glass pie plate or 8×8 glass baking dish. Smooth out top. Sprinkle the crushed Ritz crackers over the top. Bake in preheated oven for 30 minutes or until golden brown and bubbly on top. Cool a bit and serve with baguette slices or Ritz crackers.
