If you love the taste of traditional stuffed green peppers, but don’t have time to hassle, this is the recipe for you. We adore this healthy casserole, and it really tastes exactly like stuffed green peppers!

~ preheat oven to 350 degrees F. ~

1 lb. lean ground beef, browned with some pink still showing

1 large onion, chopped

2 large cloves garlic, minced

1 (15 oz.) can petite diced tomatoes + juice from can

1 (15 oz.) can of your favorite pizza sauce

2 large green peppers, diced into bite size chunks (seeds and stems discarded)

2 cups cooked white rice

1 Tablespoon Worcestershire sauce

1 teaspoon freshly ground black pepper

1 (8 oz.) ball fresh Mozzarella cheese, cut into 1 inch cubes (optional)

lots of ketchup for topping

Brown beef and onions in a heavy skillet just until onion is softened and meat is browned with some pink still showing. Drain, if needed. Add garlic and cook an additional minute. Transfer to a 4 to 5 quart casserole pan. Mix in the rest of the ingredients, except for the cheese and ketchup. Cover with casserole lid or foil. Cook at 350 degrees F. for 1 hour. Uncover, sprinkle with cheese, if using. Cook for 5 to 10 minutes more, or just until cheese is melty.

Plate and serve with ketchup for topping. Salt and pepper to taste.
