onion & garlic smashed potatoes

If you like potatoes, you’re going to love these. They’re the perfect accompaniment to grilled steaks or my favorite bacon wrapped bbq chicken. Dress them up however you like. We make them like this…

~ preheat oven to 450 degrees F. ~

8 smallish russet, red or Yukon Gold potatoes, scrubbed

1/3 cup melted butter

4 to 6 large cloves garlic, minced

4 green onions + green tops, chopped

coarse sea salt or Lawry’s seasoned salt

freshly ground black pepper

Scrub potatoes and dry them off. Leave skins on, and prick each with a sharp knife or a fork three or four times. Place potatoes on a microwave-safe plate and cook on high until soft enough to easily pierce with a knife (5 to 10 minutes). Remove potatoes from microwave and allow them to rest for 10 minutes. Place potatoes on a large baking sheet. With the bottom of a glass, or measuring cup, smash the potatoes to about 3/4 inch thickness. Generously drizzle each potato with some of the butter. Sprinkle some of the minced garlic, green onions, salt and pepper over each. Bake in preheated oven for 15 to 20 minutes or until golden brown and crispy around the edges. Serve immediately.
