This time of year is awesome for coming up with simple, easy, delicious grilling recipes. Some of my favorite chicken recipes require a few flavorful marinade ingredients, boneless skinless chicken breasts, a big heavy duty Ziploc bag and a few hours time so they can marinate in the fridge. Here’s my latest creation, and it turned out soooo good!

4 large boneless, skinless chicken breasts

1 shot tequila

juice of two, large juicy limes

3 Tablespoons honey or brown sugar

1 teaspoon coarse sea salt

1 teaspoon freshly ground black pepper

Place everything in a big, heavy duty Ziploc bag and remove as much air from the bag as possible. Seal bag and moosh all of the marinade ingredients around the chicken. Place bag in a bowl and set in the refrigerator to marinate for 3 to 24 hours prior to grilling.

Grill approximately 2 to 4 minutes per side on a medium-hot grill until no longer pink and juices run clear when cut open with a knife.

Garnish with a little toasted coconut if you like. This chicken is good with coconut rice or rice pilaf and a sweet fruit salsa or pineapple slices.
