Ready for another delicious, easy appetizer? This is a wonderful, different way to use up some of those garden tomatoes! If you like caprese salad, you’ll love this!

cherry tomatoes

fresh mozzarella cheese

1/4 cup real mayonnaise

2 Tablespoons olive oil

2 cloves fresh garlic

small, fresh basil sprigs

Hollow out the cherry tomatoes and turn them upside down on paper towels so they can drain (for 10 to 15 minutes.)

Cut fresh Mozzarella into little chunks that will fit into the tomatoes. Put one chunk in each.

Saute the fresh garlic in the olive oil. Cook over medium heat just until garlic turns a light golden brown. Remove from heat and cool. Mix with mayonnaise. Put a dab of the garlic mayonnaise on each of the caprese bites and top each with a tiny sprig of fresh basil. You may have to cut a little bit off the bottom of each tomato if you want them to sit flat on a plate.
