This is my favorite way to enjoy catfish! Wonderful as an appetizer or main course.

~preheat oil in deep-fryer to 375 degrees~

1 cup yellow cornmeal

1 Tablespoon smoked paprika

1 teaspoon cayenne pepper

3/4 cup buttermilk

1 Tablespoon Louisiana Hot Sauce, Tabasco (or your favorite)

32 oz. boneless skinless catfish nuggets, rinsed and patted dry

salt, pepper and Old Bay Seasoning

peanut oil or vegetable oil for frying

tartar sauce for dipping

In one bowl, mix cornmeal, smoked paprika, and cayenne.

In a separate bowl, mix buttermilk and hot sauce.

Season catfish with salt, pepper and Old Bay Seasoning. Dredge in buttermilk mixture and then the cornmeal spice mixture.

Working in batches, drop the prepared catfish nuggets into the hot oil. Fry for approximately 4 minutes or until deep brown and crispy. Remove nuggets to paper towel-lined plates. Season to taste. Serve with tartar sauce.
